    Prepare the Black Bean Puree

    In a blender, combine the cooked black beans with a pinch of salt and blend until smooth. Set aside.

    Cook the Ham and Onions

    In a skillet over medium heat, add 1 tablespoon of olive oil. Add diced ham and chopped red onion, sauté until the onions are translucent and the ham is slightly crispy.

    Cook the Eggs

    In another skillet, add the remaining olive oil. Crack the eggs into the skillet and cook to your desired doneness (sunny-side-up, over-easy, etc.). Season with salt and pepper.

    Heat the Tortillas

    In a separate pan, lightly toast the corn tortillas until warm and slightly crispy.

    Assemble the Dish

    On each tortilla, spread a layer of black bean puree, add the cooked ham and onion mixture, place the fried egg on top, and finish with slices of avocado, a dollop of Mexican sour cream, and crumbled queso fresco.

    Serve the huevos rancheros alongside a portion of cooked rice and frijoles charros for a complete meal.
