Prepare the Fish
Preheat a grill or grill pan over medium-high heat. Pat the fish fillets dry and season both sides generously with blackening seasoning.

Grill the Fish
Place the seasoned fish on the grill and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice char. Remove from heat and let rest for a couple of minutes.

Warm the Tortillas
While the fish rests, warm the flour tortillas on the grill or in a skillet for about 30 seconds on each side until pliable.

Assemble the Tacos
Flake the grilled fish into bite-sized pieces and place them in the center of each tortilla. Top with red cabbage, pico de gallo, a drizzle of chipotle mayo, and a dollop of Mexican crema.

Serve
Serve the tacos immediately with lime wedges on the side for squeezing over the top.
