Prepare the Filling
In a large bowl, combine the shredded chicken, Mexican 3 cheese mix, Queso Oaxaca, and chopped cilantro. Mix until well combined.

Assemble the Quesadilla
Place a tortilla in a skillet over medium heat. Spread an even layer of the chicken and cheese mixture on one half of the tortilla. Fold the other half over the filling.

Cook the Quesadilla
Add 1 tablespoon of olive oil to the skillet. Cook the quesadilla for about 3-4 minutes on each side or until golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve with a side of Mexican rice, beans, and sour cream.
