Prepare the Birria
In a large pot, soak guajillo and ancho chiles in hot water for 15 minutes. Drain and blend with garlic, onion, cumin, oregano, salt, and pepper until smooth. In a separate pot, sear the beef cheeks until browned, then add the blended sauce and beef broth. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.

Make the Black Bean Puree
In a blender, puree canned black beans with a little water, salt, and pepper until smooth. Adjust seasoning to taste.

Prepare the Queso Fundido
In a small saucepan, heat queso blanco over low heat until melted and smooth. Stir occasionally to prevent burning.

Assemble the Nachos
On a large platter, layer corn tortilla chips, shredded beef from the birria, black bean puree, queso fundido, pico de gallo, pickled jalapenos, and ranchero sauce. Garnish with fresh cilantro.

Serve the nachos immediately while warm, and enjoy!
