    Roast the Cherry Tomatoes

    Preheat the oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes until they are soft and slightly caramelized.

    Prepare the Red Onions

    While the tomatoes are roasting, thinly slice the red onion. You can soak the slices in ice water for about 10 minutes to reduce their sharpness, then drain.

    Cook the Eggs

    In a non-stick skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook them sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork, then add lemon juice, salt, and pepper to taste.

    Toast the Bread

    Toast the slices of bread until golden brown.

    Spread the mashed avocado on the toasted bread. Top with roasted cherry tomatoes, red onion slices, and finally place the sunny side up eggs on top. Garnish with fresh basil if desired.
