Tart Preparation

    Make the Tart Crust

    In a large mixing bowl, whisk together the flour, cocoa powder, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the olive oil and cold water until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

    Pre-bake the Crust

    Preheat your oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and fit it into a tart pan. Prick the bottom with a fork to prevent bubbling. Bake for 15 minutes, then remove from oven and let cool.

    Prepare the Filling

    In a saucepan over low heat, combine chopped dark chocolate, olive oil, and lemon oil. Stir until melted and smooth. Remove from heat and let cool slightly.

    Assemble the Tart

    Pour the chocolate filling into the cooled tart crust, spreading evenly. Let it set at room temperature for about an hour.

    Once set, sprinkle the tart with flaky sea salt and top with candied citrus peel. Slice and serve.
