Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and dry the fingerling potatoes, then cut them in half lengthwise.

Season the Potatoes
In a large bowl, toss the halved fingerling potatoes with olive oil, salt, and black pepper until evenly coated.

Roast the Potatoes
Spread the potatoes cut-side down on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy.

Prepare the Garnish
While the potatoes are roasting, chop the scallions and slice the sweety drop peppers.

Serve
Once the potatoes are done, remove them from the oven and let them cool slightly. Serve the crispy fingerlings drizzled with tonnato sauce and topped with chopped scallions and sweety drop peppers.
