Pretzel Preparation

Prepare the Dough
In a large bowl, dissolve sugar and yeast in warm water. Let it sit for about 5 minutes until frothy. Add flour, salt, and melted butter, and mix until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzels
Preheat oven to 450°F (232°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.

Baking Soda Bath
In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the water for 30 seconds, then remove and place on a parchment-lined baking sheet.

Bake
Sprinkle coarse sea salt on the pretzels. Bake for 12-15 minutes until golden brown.
