    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and make the fries crispier.

    Heat the Oil

    In a large, deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water and pat them dry with paper towels. Carefully add a batch of fries to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove fries with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt, black pepper, garlic powder, paprika, onion powder, and dried parsley. Toss to coat evenly.

    Serve

    Serve the seasoned fries hot with your favorite dipping sauce.
