Prepare the Base
Wash and peel the potatoes (if desired). Cut them into uniform sticks for fries or into bite-sized pieces for tots. For onion rings, slice the onion into rings. For sweet potato fries, cut sweet potatoes into sticks.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Cooking

Fry the Potatoes
Carefully add the potato sticks to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Season (if making seasoned fries)
While the fries are still hot, toss them with paprika, garlic powder, onion powder, salt, and black pepper to taste.

Prepare Onion Rings (if making)
In a bowl, mix flour, cornstarch, baking powder, and salt. Dip onion rings in the batter and fry until golden brown, about 3-4 minutes.

Prepare Sweet Potato Fries (if making)
Toss sweet potato sticks with olive oil, cinnamon, and salt. Fry until crispy, about 5-7 minutes.

Cook Tater Tots (if making)
For frozen tater tots, follow package instructions. Fry until golden and crispy.
