Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Cook the Beef
In the same skillet, drain excess bacon fat and add the ground beef. Season with salt and pepper. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Cheese
Sprinkle the Cheddar Jack cheese over the cooked beef. Cover the skillet and let it melt for about 2 minutes.

Prepare Vegetables
While the beef is cooking, chop the lettuce, tomato, red onion, and pickles.

Assemble the Gyro
Place a pita bread on each plate. Layer with beef and cheese, followed by bacon, lettuce, tomato, red onion, and pickles. Drizzle with Therapy Sauce.

Serve immediately with a side of kettle chips.
