Prepare the Mangoes
Peel the ripe mangoes, remove the pits, and chop them into small pieces. Measure out 4 cups of chopped mango.

Make the Simple Syrup
In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar is completely dissolved. Allow the syrup to cool to room temperature.

Blend the Ingredients
In a blender, combine the chopped mango, fresh lime juice, and the cooled simple syrup. Optionally, add a pinch of salt and fresh mint leaves for added flavor. Blend until smooth.
Freezing

Freeze the Mixture
Pour the blended mango mixture into a shallow dish or ice cream maker. If using a shallow dish, place it in the freezer.

Stir and Scrape
Every 30 minutes, use a fork to stir and scrape the mixture to break up any ice crystals. Continue this process for about 2-3 hours, until the sorbet is firm and fluffy.

Once the sorbet is fully frozen, scoop it into bowls or cones. Garnish with fresh mint leaves if desired, and enjoy your refreshing mango sorbet!
