For the Ribeye

    Prepare the Coffee Rub

    In a small bowl, combine Kona coffee, brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Mix until well combined.

    Rub the Steak

    Pat the ribeye steaks dry with paper towels. Rub the olive oil over each steak, then generously apply the coffee rub mixture to both sides of the steaks, pressing it in to adhere.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the ribeye steaks for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes before slicing.

For the Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over high heat.

    Cook the Potatoes

    Once boiling, reduce the heat to medium and cook until the potatoes are fork-tender, about 15-20 minutes. During the last 5 minutes of cooking, add the peeled garlic cloves to the pot.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

For the Seasonal Vegetables

    Prepare the Vegetables

    Wash and cut the zucchini, bell pepper, and carrots into bite-sized pieces.

    Sauté the Vegetables

    In a skillet over medium heat, add olive oil. Once hot, add the cut vegetables and sauté for 5-7 minutes until tender. Season with salt and black pepper to taste.
