Grilling the Chicken

Prepare the Chicken
In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them well with the marinade. Let marinate for at least 30 minutes.

Grill the Chicken
Preheat a grill or grill pan over medium heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest.
Cooking the Rice

Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes.
Making the Lilikoi Sauce

Combine Ingredients
In a small saucepan, combine lilikoi puree, honey, soy sauce, cornstarch, and water. Stir well to combine.

Cook the Sauce
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly until the sauce thickens, about 3-4 minutes. Remove from heat.
Assembling the Bowl

Slice the Chicken
Slice the grilled chicken breasts into strips.

Serve
In a bowl, layer the cooked rice, top with sliced chicken, and drizzle generously with lilikoi sauce. Garnish with chopped green onions and sesame seeds.
