Preparation Steps
Prepare the Switchel
In a blender, combine wild blueberries, grated ginger, apple cider vinegar, and honey or maple syrup. Blend until smooth. Strain the mixture through a fine mesh sieve into a bowl to remove the solids.
Mix the Drink
In a cocktail shaker, combine 2 oz of the prepared blueberry switchel and vodka. Fill the shaker with ice cubes and shake well.
Serve
Strain the mixture into a glass filled with ice. Top with ginger beer and stir gently to combine. Garnish with fresh mint leaves.
