Prepare the Marinade

In a saucepan, bring water to a boil and remove from heat. Add guajillo and ancho chiles. Let them soak for 15 minutes until softened. Remove chiles and blend them with garlic, cumin, oregano, black pepper, salt, and apple cider vinegar until smooth.

Marinate the Beef

Rub the marinade all over the chuck roast. Place it in a slow cooker with beef broth and bay leaves. Cover and cook on low for 8-10 hours until tender.

Assemble Tacos

Shred the beef and warm the corn tortillas. Place some shredded beef on each tortilla, top with queso fresco, diced onions, and chopped cilantro.

Serve with Dipping Broth

Ladle the reserved broth into bowls for dipping. Add lime juice and diced onion to the broth before serving.
