Directions for Preparing Mel's Diner Garlic Cheese Grits

Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add the salt and gradually stir in the grits. Reduce heat to low and cover. Cook for about 20-25 minutes, stirring occasionally, until thickened.

Add Cheese and Flavor

Once the grits are cooked, stir in the butter, cheddar cheese, and garlic powder until fully melted and combined. Remove from heat and let it cool slightly.

Prepare for Frying

In a bowl, beat the eggs. Pour the cooled grits into a greased square pan or dish, spreading evenly. Once set, cut the grits into slices and dip each slice in the beaten eggs, then coat with bread crumbs.

Fry the Grits

Heat oil in a deep frying pan over medium heat. Fry the breaded grit slices until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Serve

Serve the fried garlic cheese grits with a side of remoulade sauce and garnish with chopped scallions.
