Prepare the Charred Onion Soubise
Slice the medium onions. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions, and cook until they are caramelized and charred, about 15-20 minutes. Add salt to taste. Once charred, transfer to a blender and blend until smooth. Set aside.
Cook the Bucatini
In a large pot, bring salted water to a boil. Add the Zelli Bucatini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Prepare the Melted Leeks
While the pasta cooks, slice the leeks and rinse them thoroughly. In the same skillet used for the onions, add another tablespoon of olive oil and the leeks. Cook over medium heat until softened, about 5-7 minutes. Season with salt.
Combine the Ingredients
In a large mixing bowl, combine the cooked Bucatini, charred onion soubise, melted leeks, grated Parmesan cheese, and cracked black pepper. Add reserved pasta water a little at a time until the desired creamy consistency is reached.
Serve
Plate the pasta mixture and top with crispy fried onions and micro leeks for garnish. Add additional cracked black pepper if desired.
