Prepare the Steak
Season the flat iron steak generously with salt and crushed black peppercorns on both sides.
Sear the Steak
In a large skillet, heat the olive oil over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare. Remove from skillet and let it rest.
Make the Sauce
In the same skillet, add the brandy and scrape up any brown bits, letting it simmer for 2-3 minutes. Add the heavy cream and stir until the sauce thickens slightly. Season with salt and pepper to taste.
Prepare the Potato Mash
Peel and chop the potatoes, then boil them in salted water until tender. Drain, then mash with butter and truffle oil until creamy. Season to taste.
Sauté the Green Beans
In a separate pan, melt a tablespoon of butter and sauté minced garlic until fragrant. Add green beans and sauté for about 5-7 minutes, then finish with lemon juice.
Serve
Slice the steak and serve over the truffled potato mash, drizzled with brandy cream sauce and accompanied by sautéed green beans.
