Method

Preparing the Pork Chops

Season the Chops

Rub the pork chops with garam masala, salt, and black pepper. Let them marinate for at least 30 minutes.

Sear the Chops

Heat olive oil in a skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until browned and cooked through. Remove and let rest.

Making the Tamarind-Apricot Chutney

Combine Ingredients

In a saucepan, combine tamarind paste, chopped dried apricots, brown sugar, apple cider vinegar, grated ginger, and water. Bring to a boil.

Simmer

Reduce heat and let it simmer for about 15-20 minutes until the apricots are soft and the mixture thickens. Blend until smooth if desired.

Preparing the Sweet Potato Gratin

Preheat Oven

Preheat your oven to 375°F (190°C). Grease a baking dish with butter.

Layer Ingredients

In the greased dish, layer the sliced sweet potatoes, garlic, salt, and pepper. Pour heavy cream over the top and sprinkle with Gruyère cheese.

Bake

Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until golden and bubbly.

Prepare the Salad

In a bowl, combine mixed salad greens, olive oil, lemon juice, salt, and pepper. Toss to coat.
