Braised Duck

In a large skillet, sear the duck breasts over medium heat until browned on both sides. Reduce heat and add fresh mint, lime juice, and jalapeños. Cover and cook for about 20 minutes until the duck is tender. Shred the duck and mix with black beans, cherry tomatoes, corn, and bell pepper. Cook for an additional 5 minutes to combine flavors.

Avocado Hummus Preparation

Make the Hummus

In a food processor, combine avocado, chickpeas, tahini, minced garlic, lime juice, salt, and water. Blend until smooth and creamy. Adjust seasoning to taste. Set aside.

Assemble the Tacos

In each crispy corn shell, layer the shredded duck filling, a dollop of avocado hummus, and top with shredded Cabot cheddar cheese and baby arugula. Serve with mixed greens on the side.
