Prepare the Gnocchi

In a mixing bowl, combine masa harina, water, and salt. Mix until a dough forms. Roll the dough into small logs, then cut into bite-sized pieces to form gnocchi.

Cook the Gnocchi

Bring a pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauté the Vegetables

In a large skillet, heat a tablespoon of oil over medium heat. Add the red onion, serrano pepper, red and yellow bell peppers, and scallions. Sauté until softened, about 5-7 minutes.

Add Prawns (or Jackfruit)

Add the prawns (or jackfruit) to the skillet and cook until the prawns are pink and cooked through, about 3-4 minutes. If using jackfruit, cook until heated through.

Combine Ingredients

Add the cooked gnocchi, sweet corn, black beans, and tomatoes to the skillet. Pour in the chili lime sauce and stir to combine. Cook for another 2-3 minutes until heated through.

Serve

Serve hot, topped with crumbled cotija cheese if using. Enjoy!
