Cook the Pasta

In a large pot, bring salted water to a boil. Add cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Chicken and Bacon

In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove and set aside. In the same skillet, add the bacon slices and cook until crispy. Remove from the pan and chop into pieces.

Make the Sauce

In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Combine Ingredients

Add the cooked cavatappi pasta, roasted tomatoes, sweet peas, cooked chicken, and bacon to the skillet. Toss everything together until well coated in the creamy sauce. Cook for an additional 2-3 minutes to heat through.

Serve

Serve the cavatappi carbonara immediately, garnished with additional Parmesan cheese and black pepper if desired.
