Make the Griddle Cakes
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, eggs, and melted butter. Combine the wet ingredients with the dry ingredients, stirring until just combined. Do not over-mix.

Cook the Griddle Cakes
Preheat a griddle or non-stick skillet over medium-low heat. Pour about 1/4 cup of the batter onto the griddle for each cake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.

Prepare the Eggs
In a small bowl, beat the remaining eggs and season with salt and pepper. In the same skillet used for the bacon, pour in the beaten eggs, cooking them until just set, then fold.
