    Prepare the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.

    Mix the Filling

    In a mixing bowl, combine the cooked spinach mixture with crumbled feta cheese, chopped dill, parsley, black pepper, salt, and the beaten egg. Mix well to combine.

    Layer the Phyllo Pastry

    Preheat the oven to 180°C (350°F). Lay one sheet of phyllo pastry on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again. Repeat for 4-5 sheets.

    Fill and Fold

    Spoon some of the spinach filling along one edge of the layered phyllo. Fold the sides over the filling and roll it up tightly. Place the rolled spanakopita seam-side down on a greased baking sheet. Repeat with remaining phyllo and filling.

    Bake the Spanakopita

    Brush the tops of the spanakopita with melted butter and bake in the preheated oven for 25-30 minutes or until golden brown and flaky.

    Remove from oven, let cool for a few minutes, then slice and serve warm.
