Prepare the Onions
Slice the onion into thin rings. In a skillet, heat 1 tablespoon of oil over medium heat. Add the onions and sauté until caramelized, about 10-15 minutes. Remove from heat and set aside.

Form the Patties
Divide the ground beef into 2 equal portions and gently shape them into loose balls. Do not overwork the meat.

Cook the Patties
In the same skillet, add another tablespoon of oil and heat over high heat. Once hot, place the beef balls in the skillet and immediately smash them down using a spatula to form thin patties. Season with salt and black pepper. Cook for about 2-3 minutes until a crust forms, then flip and place a slice of American cheese on each patty. Cook for another 1-2 minutes until the cheese melts.

Toast the Texas Toast
While the patties are cooking, in another skillet or the same one, toast the Texas toast slices until golden brown on both sides.

Assemble the Burgers
On a slice of toasted Texas toast, place one melted patty, followed by some caramelized onions. Top with the second patty and finish with another slice of toasted Texas toast. Repeat for the remaining sandwiches.

Serve
Cut the burgers in half and serve immediately with your favorite sides.
