Prepare the Chicken Tenders
In a bowl, soak chicken tenders in buttermilk for at least 30 minutes. In a separate bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper. Heat vegetable oil in a deep fryer or heavy skillet to 350°F (175°C). Dredge the soaked chicken tenders in the flour mixture and fry until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.
Make the Waffles
In a large bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, combine buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in shredded cheddar cheese. Preheat a waffle iron and cook the batter according to manufacturer's instructions until golden brown.
