DOUBLE SMASHED PATTY, AMERICAN CHEESE, LETTUCE, BACON, CARAMELIZED ONIONS, FRIED EGG, CHIPOTLE MAYO. SERVED WITH FRIES OR SALAD.
Slice the onion thinly. In a skillet over medium heat, add a tablespoon of oil and the sliced onions. Cook slowly, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes.
In the same skillet, cook the bacon until crispy. Remove and set aside on a paper towel to drain.
Divide the ground beef into two equal portions. Form into loose balls, season with salt and black pepper.
In a hot skillet, add a little oil. Smash the beef balls down with a spatula to create patties. Cook for about 2 minutes on one side, flip, and immediately place a slice of American cheese on each patty. Cook for another 1-2 minutes until the cheese is melted.
In another pan, fry the egg to your liking (sunny-side up or over easy).
Spread chipotle mayo on the bottom half of the burger bun. Layer with lettuce, one burger patty, caramelized onions, bacon, the second burger patty, the fried egg, and the top bun.
