Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a 1:1.5 rice-to-water ratio, bringing to a boil then simmering for 15-20 minutes until tender. Fluff with a fork and set aside.

Pickle the Cucumbers
Thinly slice the cucumber and place in a bowl. In a small bowl, mix equal parts rice vinegar and sugar (about 1/4 cup each). Pour over the cucumber slices and let them pickle for at least 10 minutes.

Prepare Sriracha Mayo
In a small bowl, combine mayonnaise and sriracha sauce. Adjust the amount of sriracha to your taste.

In a bowl, layer the cooked jasmine rice, topped with the teriyaki salmon, pickled cucumbers, carrot slaw, sliced avocado, crispy onions, and a sprinkle of toasted sesame seeds. Drizzle with sriracha mayo before serving.
