Method

Preparation Steps

  1. 1

    Cook the Rice

Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using a 1:1.5 rice-to-water ratio, bringing to a boil then simmering for 15-20 minutes until tender. Fluff with a fork and set aside.

  2. 2

    Prepare the Salmon

Preheat the grill or a skillet over medium heat. Brush the salmon fillets with teriyaki sauce and grill or pan-sear for about 5-6 minutes per side, or until cooked through and flaky. Brush with additional teriyaki sauce during cooking for extra flavor.

  3. 3

    Pickle the Cucumbers

Thinly slice the cucumber and place in a bowl. In a small bowl, mix equal parts rice vinegar and sugar (about 1/4 cup each). Pour over the cucumber slices and let them pickle for at least 10 minutes.

  4. 4

    Make Carrot Slaw

Grate the carrot using a grater or food processor. Toss with a bit of salt and sesame oil to taste. Set aside.

  5. 5

    Prepare Sriracha Mayo

In a small bowl, combine mayonnaise and sriracha sauce. Adjust the amount of sriracha to your taste.

  6. 6

    Assemble the Bowl

In a bowl, layer the cooked jasmine rice, topped with the teriyaki salmon, pickled cucumbers, carrot slaw, sliced avocado, crispy onions, and a sprinkle of toasted sesame seeds. Drizzle with sriracha mayo before serving.
