Prepare the Chicken

In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Coating

In a separate bowl, mix together the all-purpose flour and cornstarch. Remove the chicken from the marinade and let the excess drip off. Dredge each piece in the flour mixture, pressing to adhere.

Fry the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken thighs. Fry for about 6-8 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Bacon

In the same skillet or a separate skillet, cook the bacon strips until crispy. Remove and place on paper towels to drain.

Make the Slaw

In a large bowl, combine coleslaw mix and mayonnaise. Mix well until the slaw is creamy.

Assemble the Sandwich

On the bottom half of each hamburger bun, layer the fried chicken, bacon, pickles, and creamy slaw. Drizzle with hot honey and top with the other half of the bun.
