Prepare the Tortilla Chips
Cut the corn tortillas into triangles. Heat vegetable oil in a large pan over medium heat. Fry the tortilla triangles in batches until they are golden and crispy. Remove them from the oil and drain on paper towels. Sprinkle with salt while still hot.

Make the Green Tomatillo Sauce
In a pot, boil the tomatillos until they are soft, about 10 minutes. Drain and blend them with green onions, jalapeño, cilantro, and a pinch of salt until smooth. Adjust seasoning to taste.

Assemble the Chilaquiles
In a large serving dish, spread a layer of tortilla chips. Pour the green tomatillo sauce over the chips, ensuring they are well coated. Top with crumbled Cotija cheese, additional cilantro, and a drizzle of crema.
