    Prepare the Chimichurri

    In a bowl, combine chopped parsley, minced shallots, capers, mustard, olive oil, red wine vinegar, minced garlic, red pepper flakes, fresh oregano, salt, and black pepper. Mix well and set aside.

    Prepare the Bone Marrow

    Preheat your smoker to a temperature of 225°F (107°C). Season the bone marrow with salt and black pepper. Place the bone marrow on the smoker and smoke for about 30-40 minutes, or until the marrow is soft and starts to separate from the bone.

    Toast the Gaucho Bread

    While the marrow is smoking, toast the gaucho bread slices on a grill or in a toaster until golden brown.

    Assemble the Dish

    Once the bone marrow is done, remove it from the smoker. Scoop the marrow onto the toasted gaucho bread and top with the chimichurri sauce. Serve immediately.
