Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half.

Season the Brussels Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer and roast for 20-25 minutes, or until golden brown and crispy, stirring halfway through.

Make the Tamarind Glaze
In a small bowl, mix the tamarind paste and maple syrup until well combined. Drizzle this glaze over the roasted Brussels sprouts and toss to coat.

Prepare the Smoked Cashew Puree
Soak the smoked cashews in water for at least 2 hours. Drain and place them in a blender with 1 cup of fresh water and lemon juice. Blend until smooth and creamy.
