Prepare the Pickled Red Onions
In a bowl, combine the sliced red onions, apple cider vinegar, sugar, and salt. Let it sit for at least 30 minutes to pickle.

Cook the Pork
In a slow cooker, add the pork shoulder and season with taco seasoning. Pour in the pineapple vinegar. Cook on low for 8 hours or until the meat is tender and shreds easily.

Make the Cabbage Slaw
In a large bowl, combine the green cabbage, grated carrot, cilantro, lime juice, olive oil, salt, and pepper. Toss to combine.

Assemble the Tacos
Warm the corn tortillas. Fill each tortilla with shredded pork, top with cabbage slaw, and pickled red onions. Serve immediately.
