    Marinate the Tofu

    Press the tofu to remove excess moisture. Cut it into cubes or slabs. In a bowl, mix olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper. Add the tofu and let it marinate for at least 30 minutes.

    Prepare the Sweet Potatoes

    While the tofu is marinating, peel and cube the sweet potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and set aside.

    Roast the Tofu

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the marinated tofu on the sheet and roast for 25-30 minutes, flipping halfway through, until golden and crispy.

    Cook the Corn

    If using fresh corn, remove the kernels from the cob. Sauté the corn in a skillet with a little olive oil and season with salt for about 5-7 minutes until tender.

    Assemble the Dish

    Serve the roasted tofu on a plate alongside the boiled sweet potatoes and sautéed corn. Top with salsa criolla and fresh cilantro.
