Marinate the Chicken
Rub the marinade all over the chicken, making sure to get it under the skin and inside the cavity. Allow it to marinate for at least 1 hour, or overnight in the refrigerator for better flavor.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Vegetables
In a baking dish, toss the cubed sweet potatoes and corn with a bit of olive oil, salt, and pepper.

Roast the Chicken and Vegetables
Place the marinated chicken on top of the vegetables in the baking dish. Roast in the oven for about 1 hour and 15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serve
Let the chicken rest for about 10 minutes before carving. Serve with chopped cilantro and additional lime wedges on the side.
