Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine flour and salt. Mix well.

Combine Mixtures
Once the yeast is activated, add it along with olive oil to the flour mixture. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Shape the Bread
After rising, punch down the dough and shape it into a loaf or round shape as desired.

Second Rise
Place the shaped dough on a baking sheet lined with parchment paper. Cover and let it rise for another 30 minutes.

Preheat Oven
Preheat the oven to 375°F (190°C).

Bake
Sprinkle with bonfire salt before placing in the oven. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped.

Remove from the oven and let cool on a wire rack. Serve warm with chimichurri.
