    Prepare the Caramelized Onion Puree

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and a pinch of salt. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Remove from heat and blend until smooth, adding a little water if necessary to reach a puree consistency.

    Cook the Foraged Mushrooms

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the foraged mushrooms and sauté for about 5-7 minutes until they are tender and lightly browned. Season with salt and pepper to taste.

    Fry the Egg

    In a separate pan, fry the farm egg to your liking (sunny-side up or over-easy) with a little olive oil. Season with salt and pepper.

    Assemble the Dish

    On a plate, spread a layer of the caramelized onion puree. Top with the sautéed mushrooms, then place the fried egg on top. Garnish with grated aged parmesan and freshly chopped herbs. Serve with toasted brioche on the side.
