    Prepare the Venison

    Remove the venison steaks from the refrigerator and let them come to room temperature for about 30 minutes. This helps in even cooking.

    Season the Steaks

    Rub the venison steaks with olive oil, salt, black pepper, and fresh rosemary on both sides.

    Grill the Steaks

    Preheat the grill over high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from the grill and let rest for 5 minutes before slicing.

Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel the russet potatoes and cut them into uniform chunks. Place them in a large pot and cover with cold water.

    Cook the Potatoes

    Add garlic cloves to the pot with the potatoes. Bring the water to a boil, then reduce heat and simmer for about 15-20 minutes, or until potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

Truffle Jus

    Prepare the Jus

    In a saucepan, combine beef stock and fresh thyme. Bring to a simmer and reduce the liquid by half, about 15-20 minutes.

    Add Truffle Oil

    Remove the saucepan from heat and stir in the black truffle oil. Season with salt and black pepper to taste.
