Prepare Octopus

Clean the Octopus

Rinse the octopus under cold water and remove the beak and ink sac. Pat dry with paper towels.

Cook the Octopus

In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes until tender. Remove and let it cool.

Fry the Octopus

Cut the octopus into bite-sized pieces. Heat olive oil in a frying pan over medium-high heat. Add chopped garlic and sauté for 1 minute. Add the octopus, sprinkle with pimentón and salt, and fry until golden and crispy, about 5-7 minutes.

Prepare Saffron Potatoes

Boil the Potatoes

Peel and cut the potatoes into chunks. In a pot, combine potatoes, water, and salt. Bring to a boil and cook until tender, about 15-20 minutes.

Add Saffron

Once the potatoes are cooked, drain them and return them to the pot. Add saffron threads and olive oil. Stir gently to coat the potatoes evenly.

Assemble and Garnish

Serve the Dish

On a serving plate, arrange the saffron potatoes. Top with the fried octopus pieces. Garnish with black olives and chopped fresh parsley.
