Preparation of Salsa Verde

1. Make the Salsa Verde

In a food processor, combine the fresh parsley, fresh basil, garlic cloves, capers, olive oil, lemon juice, salt, and black pepper.

2. Blend

Blend until smooth. Taste and adjust seasoning if necessary. Set aside.

Prepare the Bread

3. Slice the Baguette

Cut the motherloaf baguette into 1-inch thick slices.

4. Grill the Baguette

Heat a grill or grill pan over medium heat. Place the baguette slices on the grill and toast for about 2-3 minutes on each side until golden brown.

Assemble the Pintxo

5. Add Salsa Verde

Spread a generous amount of salsa verde on each grilled baguette slice.

6. Top with Anchovies

Layer the boquerones and Cantabrian anchovies on top of the salsa verde.

7. Add Garlic

Finely mince the garlic clove and sprinkle over the top of the anchovies.
