Prepare the Olives
In a large bowl, combine the Spanish green olives and Spanish black olives. Set aside.

Make the Marinade
In a separate bowl, whisk together the olive oil, fresh orange juice, fresh lemon juice, minced garlic, Espelette pepper, fresh thyme leaves, salt, and black pepper until well combined.
Combine Marinade and Olives
Pour the marinade over the olives in the large bowl. Stir gently to ensure all olives are evenly coated in the marinade.

Marinate the Olives
Cover the bowl with plastic wrap or transfer the olives and marinade to a sealed container. Let the olives marinate in the refrigerator for at least 2 hours, ideally overnight, to allow the flavors to meld.
