Wash and peel the Russet potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes very thinly (about 1/8 inch thick) and place them in a bowl of cold water to prevent browning.

Let the sliced potatoes soak in cold water for at least 30 minutes. This helps to remove excess starch and will result in crispier chips.

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Remove the potato slices from the water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes, or until they turn golden brown and crispy.
