In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
4. Fry the Chips
Remove the potato slices from the water and pat them dry with paper towels. Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes, or until they turn golden brown and crispy.
5. Drain and Season
Once fried, remove the chips using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, onion powder, and black pepper to taste.
6. Repeat
Continue frying the remaining potato slices in batches, making sure to maintain the oil temperature. Adjust the seasoning as desired.
