Method

Prepare the Fish

    Clean the Fish

    Rinse the whole fish under cold water and pat it dry with paper towels. Make sure to clean the cavity thoroughly.

    Season the Fish

    Rub the fish with olive oil, salt, and black pepper, ensuring the seasoning gets into the cavity as well.

Make the Jamon Vinaigrette

    Combine Ingredients

    In a small bowl, mix together the diced jamon, red wine vinegar, olive oil, minced garlic, chopped parsley, salt, and black pepper. Whisk until well combined.

Prepare the Fennel Salad

    Toss the Fennel

    In a bowl, combine the thinly sliced fennel, olive oil, lemon juice, salt, and black pepper. Toss well to coat.

Grill the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat.
