Choose 30 fresh apples of various varieties for a balanced flavor. Wash them thoroughly and remove any blemishes or rotten spots.

Using a cider press, crush and press the apples to extract the juice. Collect the juice in a clean container, ensuring no pulp remains.

Sprinkle the yeast over the surface of the mixture. Allow it to sit for about 15 minutes, then gently stir to incorporate.

Seal the fermentation vessel with an airlock to allow gases to escape while preventing contamination. Store the vessel in a cool, dark place.
