Prepare the Base
In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat the mixture over medium heat until the sugar dissolves and the mixture is hot but not boiling.

Add Flavoring
If making vanilla gelato, scrape the seeds from the vanilla bean and add them to the mixture, along with the bean pod. For chocolate gelato, whisk in the cocoa powder until smooth. For pistachio gelato, blend the pistachios into a fine paste and mix them in.

Cool the Mixture
Remove from heat and strain the mixture through a fine-mesh sieve into a bowl. Let it cool to room temperature, then cover and refrigerate for at least 4 hours, or overnight.
Churning

Churn the Gelato
Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Freeze
Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
Serving
