Preparing the Calamari

Step 1: Clean the Calamari
If using whole calamari, clean and slice them into rings. Rinse thoroughly under cold water and pat dry with paper towels.

Step 2: Prepare the Coating
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Step 3: Soak in Buttermilk
Place the cleaned calamari rings in another bowl and pour the buttermilk over them. Let them soak for at least 30 minutes.

Step 4: Coat the Calamari
Remove the calamari from the buttermilk and let excess drip off. Dredge them in the flour mixture until well coated.

Step 5: Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Step 6: Fry the Calamari
Fry the calamari in small batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Step 2: Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Step 3: Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Step 4: Finish with Basil
Remove from heat and stir in the chopped fresh basil. Adjust seasoning to taste.
