Preparation

    Boil the Eggs

    Place the eggs in a single layer in a saucepan and cover them with water. Bring the water to a rolling boil over medium-high heat.

    Cook the Eggs

    Once boiling, remove the saucepan from heat, cover, and let sit for 12 minutes.

    Cool and Peel the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water for 5 minutes. Once cooled, gently tap each egg on a hard surface to crack the shell and peel it under running water.

Making the Filling

    Prepare the Egg Yolks

    Cut each egg in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl and set the egg whites aside.

    Mix the Filling

    Add mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, smoked paprika, and chopped chives to the egg yolks. Mash with a fork until smooth and fully combined. Adjust seasoning and add Sriracha sauce to taste.

Assembly

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture, mounding it slightly.

    Garnish the Deviled Eggs

    Sprinkle the filled eggs with smoked paprika and garnish with chopped chives.
