Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, whisk the eggs and granulated sugar together until the mixture becomes pale and thick. This should take about 3-5 minutes.

    Combine Mixtures

    Once the chocolate mixture has cooled slightly, stir in the vanilla extract. Then, gently fold the egg mixture into the chocolate mixture until fully combined.

    Whip the Cream

    In a clean bowl, whip the heavy cream until it forms soft peaks. Carefully fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Whipped Cream Topping

    Prepare the Whipped Cream

    In a medium bowl, whip the heavy cream together with the powdered sugar and vanilla extract until stiff peaks form.

    Top the Mousse

    Once the mousse has set, remove it from the refrigerator. Spoon or pipe the whipped cream over the top of each mousse serving just before serving.
