Cake Preparation

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four 6-ounce ramekins with butter and lightly dust with flour. This will prevent the cakes from sticking.

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

    Mix Eggs and Sugar

    In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously to prevent the eggs from cooking.

    Add Dry Ingredients

    Sift in the all-purpose flour, adding the vanilla extract and a pinch of salt. Gently fold until just combined; do not overmix.
